How To Cook A Steak

Marbling, and why Grades do count!

Marbling is the small flecks of fat within the beef and is the main contributor of beef juiciness, flavor and tenderness. The grade of beef you purchase will determine how tender and flavorful your steak will be. For instance, some grocery stores use USDA Select Beef – this grade of beef is slightly marbled, while other grocery stores serve USDA Choice beef which has only small and modest marbling. Start Steaks at Room Temperature

Remove your steaks from the fridge, and let them sit out to get to room temperature before you start grilling. This way the steaks spend less time on the grill getting to temperature. The drier the steak is, the less steam is created, and the better the carmelization of naturally occurring sugars.

Searing – Lock in the juices!
